Mountain Sports Festival Offers a Weekend of Family Fun

In-season radishes give salad a kick, or you can whip a little something together and serve them as a side dish.

Tangy Radish Salad
2 T apple juice
2 T orange juice
2 T fresh lime juice
2 T olive oil
1 t sugar
salt and pepper
a large bunch of radishes (any kind), cut into wedges
1/4 cup fresh cilantro leaves
1/4 cup chopped red onion

In a large bowl, mix the juices, olive oil, and sugar until the sugar dissolves. Season with a pinch of salt and pepper. Add the radish wedges, cilantro, and red onion. Toss and refrigerate.

Carolina Mornings Recognized as NC Green Travel Partner; First Vacation Rental Designation in North Carolina

The designation is part of the NC Green Travel Initiative, North Carolina’s first statewide sustainable travel recognition program.
